Notes and differences between rites
The Mishnah lists this blessing among the blessings over foods. The wording draws on the psalm: “to bring forth bread from the earth”.1,2
Before the blessing the hands are washed with the blessing al netilat yadayim. The bread is usually dipped in salt or sprinkled with it.
The wording is identical in all rites; customs differ around cutting the challah (e.g. the number of challot, the way it is divided).
